Winemaking notes
Hand-harvested in small crates with meticulous sorting. Partial destemming and a 5-day cold pre-fermentation maceration. Fermentation takes place in small stainless-steel tanks, with punch-downs and pump-overs adapted to each vintage. Gentle gravity pressing and aging on fine lees in French oak barrels (25% new, 1–6 years, 228?L). Bottled according to the lunar calendar.
Viticultural notes
Clos des Fèves, a monopole of Domaine Chanson in the heart of Beaune’s Premier Crus, covers 3.80?ha on a mid-slope. Recorded as early as 1307 under the Latin name “Fae,” it sits on clay-limestone soils. After a spring alternating warm and cool periods and a hot summer punctuated by storms, the grapes reach perfect ripeness. The wine is distinguished by expressive aromas of white-fleshed fruits and an elegant, well-structured profile.
Tasting notes
Deep black color. The nose is very fresh, intense, and spicy, with ripe Burlat cherry and floral notes. The palate is structured, full, and complex, supported by powerful tannins. The wine shows great density, with a very long finish that is both powerful and elegantly refined.
Pairing notes
This wine pairs perfectly with game such as pheasant, poultry like capon, as well as all aged cheeses, notably Époisses and Langres.
