Winemaking notes
From a 2.2-hectare plot within the renowned Clos des Mouches, this Chardonnay grows on limestone and clay soils with an east-facing exposure. The grapes are harvested by hand before careful vinification. The wine is then aged for 15 months, partly in oak barrels, to enhance its texture and complexity while preserving freshness and minerality.
Viticultural notes
Clos des Mouches is a prestigious terroir on the slopes of Mont Saint-Désiré, bordering Pommard Premiers Crus. Chanson is one of the largest owners, with 4.3 hectares, including this 2.2-hectare Chardonnay parcel at the top of the hill. Its sunlit, east-facing position provides ideal ripening conditions, producing wines of remarkable tension and aromatic depth.
Tasting notes
Pale gold in color, the wine opens with floral aromas lifted by crisp notes of white-fleshed fruit and citrus. Subtle minerality underlines its elegance. On the palate, it shows richness and power, balanced by freshness and precision. Complex layers of honeyed and lightly oaked notes complete a long, harmonious finish of great finesse.
Pairing notes
Serve chilled, around 12 °C, to highlight freshness and minerality. Ideal with foie gras, refined seafood dishes such as lobster or scallops, and soft-ripened cheeses like Comté or Cîteaux. With its structure and elegance, this wine also shines alongside creamy poultry dishes or simply on its own to savor its full complexity.
