Winemaking notes
These wines were made by Kiwi winemaker, Brent King. The name Más Buscados, meaning Most Wanted, was inspired by the 3 Pacos; three growers, all called Paco, whose grapes we designated “the most wanted” for their criminal succulence and concentration. Working closely with the growers to identify only the best, low yield fruit, Más Buscados utilises forensic attention to detail in the winery to produce wines of arresting quality. Kiwi know how makes it to La Mancha. Cold soaks, extended maceration, differing temperatures at fermentation, inert gas and rigorous hygiene in the cellar combine to preserve the beautiful freshness of the fruit that can sometimes be lost in the “old world”.
Viticultural notes
Only selected, low yielding, un-irrigated vineyards are used for the Más Buscados wines. Green Harvest is vital in order to get the fruit concentration that sets the wines apart as is harvesting by hand at optimal ripeness.
Tasting notes
The suggestion of ripe pineapple, lemon and lime on the nose explode on the palate combined with crisp, refreshing acidity and a long mineral finish.
Pairing notes
Roast Chicken, Paella, Fish in a cream sauce or even on its own!
