Winemaking notes
Sparkling wine produced using the traditional method. The grapes are gently pressed at low pressure and ferment in stainless-steel tanks before undergoing a second fermentation in bottle. Fermentation is carried out with indigenous vineyard yeasts and without oenological additives (very low total sulphites). The wine then ages on its lees for more than 12 months, contributing structure and complexity.
Viticultural notes
From high-altitude vineyards located in the Montmell mountains (Baix Penedès) at around 600 m above sea level. 100 % organic farming aimed at preserving biodiversity and the forest ecosystem. Vines aged 40 to 60 years planted on limestone, stony and alluvial soils. A mountain Mediterranean climate ensures slow and balanced ripening. Hand-harvested starting September 16.
Tasting notes
A fresh and serene wine marked by lively acidity linked to altitude. Lees ageing adds depth and ageing potential while preserving tension and purity. It expresses the quiet strength of mountain wines, combining energy, finesse and cellaring capacity.
