Winemaking notes
Single-varietal white wine made from 100% Xarel·lo. The grapes are gently pressed at low pressure and fermented using indigenous vineyard yeasts. Fermentation takes place in stainless-steel tanks (80%) and cement tanks (20%), followed by 4 months of ageing on the lees.
The estate follows a minimal-intervention approach, without oenological additives (except sulphites at bottling, max. 30 mg/L).
Viticultural notes
Sourced from high-altitude vineyards located in the Montmell mountains, between 350 and 400 m above sea level, farmed organically. Vines aged 45 to 85 years grow on poor limestone and stony soils under a mountain Mediterranean climate.
The grapes are hand-harvested, and the estate actively works to restore biodiversity within the forest ecosystem.
Tasting notes
The wine expresses the character of the Penedès: freshness, salinity and aromatic complexity. The nose reveals Mediterranean notes with hints of anise and fennel, while the palate is broad, fresh and energetic with a dry, precise finish.
Pairing notes
Pairs perfectly with oysters, mussels, scallops, and other seafood.
