Winemaking notes
Hand harvested. Deliberately harvested late for dry wines (slightly overripe: end of October) after a very severe sorting in order to keep only the healthy and beautiful bunches. Total destemming before maceration of 12 hours then very slow pressing. Fermentation and maturation 60% in new barrels with stirring twice a week until bottling.
Tasting notes
Cuvée Ericka has a light straw color, bright and sustained. The nose is flattering on vanilla, toast and white flowers. There are also some fruit notes like pineapple and lemon. In the mouth, the Ericka vintage is rich, consistent and complex. The aromas are fully expressed with a long final persistence that makes you want to come back for more.
Pairing notes
Serve chilled (8-10C) with seafood, cooked fish, white meats, white sauces. Will also accompany discreet cheeses.
