Winemaking notes
Harvested by hand, carried by small trailers which unload the grapes by vibration to avoid crushing, then we use a sorting table to eliminate unripe or damaged grapes.
Pneumatic winepress.
Cool racking and temperature-controlled fermentation.
Aging on fine lees for 10 month.
The winemaking and aging are all done in stainless steel vats.
Viticultural notes
Our vineyard is located in the village of Chablis, in the very heart of the Chablis country, on the left bank of the Serein River, with a south-south east exposure. It is located in the climat Les Pargues.
The soil is kimmeridgien calcareously clay which goes back to the upper jurrassic age (portlandien).
Density plantation: 6500 vines/ha
. Average age of the vines: 47 years.

Vinous Magazine - The Villages Chablis is a terrific introduction to the Moreau wines and the house style.
