Winemaking notes
Two methods are used for vinification. First, the harvest is heated (Perrin method), followed by traditional vinification after destemming. Everything takes place in 150-hectoliter stainless steel or concrete tanks. Aging occurs in tanks and large oak casks (25% of the production) for a period of one year.
Viticultural notes
The vineyard is located on pebbly terraces between Château de Beaucastel, La Vieille Ferme, and the terraces of the Riss. The soils are clay-limestone, stony, rich in quartz and marly limestone, with the presence of red sandy clay.
Tasting notes
Intense aromas of candied red fruits, cooked raspberry, spices, and black pepper. The attack is fresh and generous. Silky tannins support a long, aromatic finish. A smooth, rounded, fresh, and structured wine.
Pairing notes
Serve with beef, lamb, poultry in sauce, or grilled dishes. It will be delicious paired with beef ravioli.
