Winemaking notes
The grapes are harvested by hand, they are then destemmed and pressed before fermentation
which takes place at a controlled temperature. The maceration is done on skins in order to extract the
best elements. The grape brandy is added at the ideal time to obtain a
balance between the body and the aromas of the wine. Aging takes place in oak barrels. Assembly
final is made from wines aged between 25 and 40 years.
Tasting notes
Wine with a rather intense amber color. Exuberant nose emanating from aromas of cooked fruits (fig, date, prune), caramel, mocha and brioche. There are also scents cigar box, orange peel, toasted hazelnut and cinnamon. Enjoy savoring this sweet wine expressing a pleasant freshness. Revealing a greasy texture, it lasts in a long finish.
Pairing notes
This wine of great complexity is excellent served alone or with a coffee, a piece of chocolate black or even a cigar. It will also accompany nut-based desserts and aged cheeses.
