Winemaking notes
The grapes are harvested by hand and transported to the winery by gravity. The must is divided according to its quality and decanted in a static way at low temperature. The first fermentation takes place in stainless steel tanks. The wine is then blended and fermented in the bottle, after which it is aged on laths for a minimum of 30 months before being disgorged. No expedition liqueur is added before marketing.
Viticultural notes
Since the viticulture is biodynamic, the vegetation cover is left in its raw and spontaneous state in order to favor a healthy biodiversity. Herbal infusions and manures are used for treatment and fertilization. The grapes for this cuvée come from 9 parcels located on the slopes of the Serral hill, between the woodland and the lake of the same name.
Tasting notes
Sparkling wine of an elegant complexity, with aromas of citrus fruits, nuts, butter and toast, all underlined by a delicate minerality. In the mouth the bubbles are of a very pleasant finesse. The mineral and saline aspects of the wine are in perfect balance with its acidity, giving it lightness and suppleness.
Pairing notes
To be served with tapas, oysters, and beef or salmon tartars.
