Winemaking notes
After manual harvesting, the grapes are sorted, crushed and vatted on arrival at the winery. The maceration stage is long, to round out and refine the tannins. Extraction is by manual punching of the cap. After malolactic fermentation and blending, vinification is short, with ageing in wooden tuns or truncated-cone vats for one year.
Viticultural notes
This wine comes from terroirs of limestone and calcareous marl with high proportions of saffron and sand, giving the Grenache a unique elegance and aromatic finesse.
Situated mid-slope, just below the village square, the Famille Perrin vineyard is one of Gigondas' most historic vineyards, benefiting from a cool breeze from the valley to the west of the village.
Tasting notes
Beautiful, limpid ruby color. The delicate nose is typical of Gigondas, with aromas of pepper, licorice and violets. On the palate, it offers a silky texture, very supple, delicate tannins and superb notes of black berries.

16°C. Veal chops with morels. Crispy lamb breast.
