Winemaking notes
pre-fermentation cold maceration is carried out to enhance fruit expression, followed by fermentation and maceration lasting around twenty days with pump-overs and punch-downs to optimize extraction. The wine is then aged for approximately 15 months in barrels previously used for one or two wines, refining the structure while preserving terroir expression.
Viticultural notes
This Cornas comes from vineyards located at over 250 meters altitude on decomposed granite terraces with a south to south-east exposure. The natural amphitheater protects the vines from cold winds and allows optimal ripening of Syrah, the sole grape variety of the appellation, expressing here its full power and typicity.
Tasting notes
The wine shows a deep red color with bright reflections and reveals an intense and complex nose marked by black fruit and spice aromas, including white pepper and cade wood. On the palate, it is rich, dense and structured, with powerful yet silky tannins that will integrate over time, leading to a long and elegant finish.
Pairing notes
This wine pairs perfectly with grilled red meats and game. It is best served around 17°C and can be enjoyed after a few years of cellaring, reaching its full complexity after 7 to 10 years.
