Winemaking notes
A 30-day pre- and post-fermentation maceration with daily pump-overs ensures the gentle extraction of color, aroma, and structure. Fermentation occurs at controlled temperatures between 26 and 28 °C, followed by complete malolactic fermentation. After stabilization, the wine is aged for at least 8 months in oak barrels, gaining smooth texture, depth, and subtle complexity before release.
Viticultural notes
This red blend of Garnacha and Cariñena comes from high-altitude Mediterranean vineyards in northeastern Spain. The vines grow under a continental climate tempered by Mediterranean influence, with hot days, cool nights, and constant breezes that allow for slow, even ripening. The stony, calcareous soils—poor in organic matter—limit vine vigor and enhance aromatic concentration, yielding expressive and balanced fruit.
Tasting notes
A deep, vivid cherry-red color. The nose offers an intense expression of ripe black fruits, complemented by balsamic hints and subtle spice from its time in oak. On the palate, it is broad and flavorful, with a generous, fleshy mouthfeel and a long, fruit-driven finish. Balanced and harmonious, this wine captures the character and energy of its high-altitude terroir.
Pairing notes
Serve at 16–18 °C after a brief aeration. This wine pairs beautifully with grilled red meats, Mediterranean stews, or aged hard cheeses.
