Winemaking notes
Covides own 3,000 ha of vineyards in the Cava DO, so the
winemakers have ample supplies of top quality grapes. At the winery, the first fermentation is in stainless steel for 7 to 10 days at temperatures controlled at 16 to 17 degrees. The second fermentation is in bottle in the champenoise method using selected yeasts.
Viticultural notes
One of Europe’s most cosmopolitan and exciting cities is the inspiration behind this stunning Cava. Anciano Cava has proved a hit with young wine drinkers looking for a stylish alternative to the famous Cava brands. Our Cava is produced by Covides, one of the area’s best bodegas. Varietals: Xarel-Lo 45%, Macabeo 35%, Parellada 20%
Tasting notes
Pale yellow in color with fine, persistent bubbles. The nose is notably fruity with a clear hint of apples and the palate has plenty of sweet fruit and balancing acidity.
Pairing notes
Drink on its own as an aperitif or as a great accompaniment to a variety of dishes including seafood paella and poultry dishes.
