Winemaking notes
Hand-harvested at dawn to take advantage of cooler overnight temperatures and preserve the full aromatic integrity of the grapes. Minimal enological intervention throughout vinification to faithfully express the Toro terroir. Aged in 500-litre bocoyes and 225-litre Bordeaux barrels in both French and American oak for harmonious wood integration.
Viticultural notes
100% Tinta de Toro (local Tempranillo) from certified organic old vines within the D.O. Toro appellation, Castile and León. The region's extreme continental climate — hot, dry summers and harsh winters — gives Tinta de Toro an unmatched concentration, depth and tannic power unique in Spain. Certified organic viticulture.
Tasting notes
Deep violet with medium-high intensity. The nose is expressive and layered: India ink, dark fruits and liquorice lead the first aromatic pass, before oak contact reveals indulgent notes of coconut and vanilla. The palate is broad and forthright, with velvety, ripe tannins, restrained acidity and an elegant, persistent finish.
Pairing notes
Serve between 14–16 °C. Pairs beautifully with grilled red meats, roast lamb, slow-cooked stews, mushroom dishes and bold aged cheeses. Enjoyable now or can be cellared for 5 to 8 years.
