Winemaking notes
The grapes are pressed immediately after harvest and left in tanks until the completion of alcoholic fermentation. The wine is then transferred to the cellar to undergo malolactic fermentation, followed by ageing in new French oak barrels for at least two years. After bottling, it continues to mature in the cellar for a minimum of two additional years. To preserve its flavour, the wine does not undergo stabilisation and filtering.
Viticultural notes
A single 3-hectare vineyard located on the Mega Spileo estate at an altitude of approximately 820 meters in the Achaia region of Greece. The vines are organically farmed, growing in clay, sand, and pebble soils that provide excellent drainage and promote slow, even ripening of the grapes. Harvest takes place in mid-October, when the fruit reaches optimal phenolic maturity.
Tasting notes
It stands out with its deep red color. The nose reveals aromas of green pepper, red fruits, and mint, enriched with smoky notes and hints of roasted nuts. On the palate, it is complex, full-bodied, and well-structured, with firm tannins and perfectly balanced acidity. The long, fruit-driven finish reflects its remarkable concentration and outstanding ageing potential.
Pairing notes
Serve at a temperature of 16–18 °C. This wine pairs beautifully with grilled red meats, slow-cooked game dishes, and aged or spicy cheeses.
