Winemaking notes
The grapes are harvested manually and undergo a cold maceration of 2 days. Fermentation takes place over 5 days in stainless steel vats with shedding and winding. The wine is then pressed and put back in stainless steel tanks for malolactic fermentation. The wine is then aged in old 225L American oak barrels. It lasts 12 months. The wine is fined and filtered before bottling.
Viticultural notes
Different vineyards in the Agter-Paal region. The vines are half cut in bush and half in espalier. The soils are mostly Malmesbury Shale and are not irrigated. This allows a reduced yield and concentration of aromas and flavors.
Tasting notes
Intense burgundy red color, the wine is aromatic with a note of game and liquorice. It is round in the mouth with blackcurrant and plum flavours, the tannins are fine and well integrated. The combination of Mourvèdre, Cinsault and Grenache brings the sweetness of red fruits and a spicy side.
Pairing notes
Will go with stewed dishes, game and bbq.
