Winemaking notes
The extreme climate of the region and sandy clay, limestone soils result in an especially rich, bold style of Tempranillo. After de-stemming, the grapes are sent directly to stainless steel tanks for maceration and fermentation with natural yeasts which takes at least 10 days. The wine rests in barrels until the winemaker decides it is ready for bottling.
Viticultural notes
Mature Tempranillo vines are cultivated on the sunniest slopes of the village of Sotillo de la Ribera, a prime location and one of the highest positions in the heart of the region. The climate is continental-Atlantic with marked diurnal temperature changes. Spring and autumn frosts are frequent. This quite extreme climate helps develop the characteristics of Tempranillo, or “Tinta del País” as the varietal is known locally.
Tasting notes
Bold, deep cherry red colour. Ripe, complex aromas of wild berries and dark cherry fruit, opening out into spicy notes of oak with hints of cinnamon and vanilla. On the palate it starts smooth, elegant and warm with bramble fruit flavours, rounded tannins, balanced acidity and hints of toffee on the long, satisfying finish. Cellar for up to 3 years and this wine will continue to mature.
Pairing notes
Game and other red meats, roast pork, paella, varied tapas or rich pasta dishes.
