Winemaking notes
The grapes are hand-harvested and carefully sorted before undergoing gentle direct pressing, with no extended maceration, in order to limit color and tannin extraction and preserve aromatic purity. Fermentation takes place in temperature-controlled stainless steel tanks, allowing precise management of aromatic expression and freshness. Malolactic fermentation is intentionally avoided to maintain the wine’s natural acidity and tension. Following alcoholic fermentation, the wine is aged on fine lees in stainless steel for approximately four to six months, enhancing texture and complexity while preserving clarity, elegance, and mineral precision. The final blend reflects meticulous selection and stylistic consistency.
Viticultural notes
Nestled within an unspoiled landscape of pine forests and Mediterranean vegetation, Château de Selle spans 84 hectares planted on a complex mosaic of soils including gypsum, red clay, sandstone, gravel, and stones. This geological diversity contributes depth, structure, and a distinctive mineral signature to the wine. The 2024 vintage benefited from a mild, rainy spring without excess, followed by a warm, dry summer moderated by cool nighttime temperatures.
Tasting notes
The wine reveals a luminous pearly-sand hue, bright and refined. The nose is complex and elegant, marked by notes of white peach and layered aromatic depth. On the palate, balance is achieved between roundness and freshness: a gentle, supple attack gradually builds in intensity, unveiling a mosaic of summer fruits supported by a precise mineral backbone. The finish is savory and persistent, distinguished by saline and zesty nuances that bring vibrancy and lift. The overall impression is one of refinement, tension, and gastronomic character.
Pairing notes
Château de Selle pairs well with flambéed or glazed monkfish with vegetables, grilled poultry in a sauce, or fruit desserts.
