Winemaking notes
The Overberg vineyard (23%) has Tafelberg sandstone, whose stony soils bring a flint minerality to the wine. The Malmesbury shale soils at Paarl (18%) have excellent water retention and produce rich, flavorful berries that result in elegant, well-balanced wines. The grapes for this wine come from three vineyards in the Western Cape region: Elgin, Overberg and Paarl respectively.
Viticultural notes
Grapes are hand-harvested in the early morning to preserve freshness and aromatic purity. Whole clusters were gently pressed before fermentation. The juice was fermented in French oak barrels, a portion of which were new, adding subtle depth and structure. The wine remained on its fine lees for nine months with periodic bâtonnage to enhance texture and complexity.
Tasting notes
Kara-Tara Chardonnay 2023 presents a pale golden hue with bright reflections. The nose opens with aromas of pear, ripe apple and preserved lemon, complemented by floral notes and a delicate hint of oak. The palate is silky and well-balanced, showing lively acidity and refined minerality. The finish is long, precise and beautifully pure.
Pairing notes
Serve slightly chilled, between 10 and 12 °C. This Chardonnay pairs beautifully with grilled fish, shellfish, white meats, or roasted vegetable dishes.
