Winemaking notes
The grapes, 20% of which are kept in whole bunches, are transferred by gravity into open vats. Fermentation takes place naturally with indigenous yeasts, accompanied by manual punching down for gentle, controlled extraction. The wine is then aged for 12 months in French oak barrels, 30% of which are new, then refined for a further six months in vats before bottling.
Viticultural notes
Made from vines selected for their ability to produce expressive Pinot Noir wines, this wine reflects the beneficial influence of cool nights and well-drained soils. The temperate climate allows for slow and steady ripening, while the sandy-clay and granite soils promote deep rooting and beautiful mineral tension. The vines are cultivated using environmentally friendly practices.
Tasting notes
A deep, luminous ruby color. The expressive, refined nose reveals aromas of black cherry, ripe raspberry, and dried rose, enhanced by subtle notes of spice and undergrowth. On the palate, it offers beautiful concentration supported by lively acidity and fine tannins. The whole is harmonious and balanced, ending with a persistent finish that is both mineral and delicately spicy.
Pairing notes
Serve slightly chilled at 14–16 °C. Perfect with roasted poultry, grilled salmon, white meats, aged cheeses, or vegetarian dishes. A versatile wine for both elegant dinners and relaxed gatherings—ideal for enjoying with good food and good company.
