Winemaking notes
Approximately 20% of the grapes were fermented as whole clusters, with the remainder destemmed and gently transferred to open-top fermenters by gravity. Fermentation occurred naturally with indigenous yeasts, accompanied by gentle manual punch-downs to ensure delicate tannin extraction. The wine was matured for 18 months in French oak barrels, 25% of which were new, before final blending and bottling without excessive fining or filtration.
Viticultural notes
This is a blend from three different vineyard blocks at different elevations on our Jonkershoek Valley farm. The higher elevation vineyards have a finely textured decomposed granite soil and tend to produce a more elegant wine with softer tannins, while the lower vineyards is very rocky and gives a denser, fruitier, more tannic wine.
Tasting notes
Deep purple-tinged robe. It opens with inviting aromas of raspberries, plums and cherries, joined by violet, cracked pepper, iron, wild herbs and lavender as they take shape. The palate is elegant and refined, displaying beautiful overall balance. A gentle sweetness lingers, continuing to impress through the fine, silky finish.
Pairing notes
Serve at 16-18 °C. This Syrah pairs beautifully with roast duck breast, herb-crusted lamb, grilled meats or slow-cooked dishes with gentle spice.
