Winemaking notes
The Cobalto undergoes a 15-day fermentation at 15°C, split between three vessels: 50% in oak barrels, 34% in amphorae, and 16% in stainless steel tanks. This variety of materials enhances the wine's fruity nuances, minerality, and subtle oak notes. After fermentation, the wine rests on its lees for 10 months in various containers, followed by at least 6 months of bottle aging to achieve complexity and harmony.
Viticultural notes
The vines, located at 150 meters altitude, benefit from a sandstone-rich soil with decomposed rock, providing excellent drainage. With a density of 5500 vines per hectare and a yield of 7 tons per hectare, Cobalto benefits from Guyot training, ensuring optimal sun exposure for ideal ripeness while preserving freshness and minerality.
