Winemaking notes
Manual harvest in crates with sorting in the vineyard and in the cellar. Vinification: Traditional, delicate pressing. 100% destemming, full cluster maceration in concrete and stainless steel vats. Indigenous yeasts. Without enzymation, without chaptalization, without acidification and without fining or filtration. Ageing: 8 months in concrete vats and old casks and bottling by gravity.
Viticultural notes
Soils: Limestone, clay-limestone, shale and rolled pebbles. Vines: Aged from 5 to 90 years old
Tasting notes
Fruity and generous. The nose is dominated by aromas of black fruits as well as sweet spices. On the palate the attack is frank, there is a nice intensity with all the fruit perceived on the nose. The finish is long and slightly peppery. The minerality contained in this clever blend will open up wisely for the next five years.
Pairing notes
Serve over roast beef or rack of lamb.
