Winemaking notes
Manual harvesting with sorting in the vineyard and in the cellar. Traditional vinification in concrete and stainless steel vats. Destemming at 100, maceration 2 to 4 weeks. Exclusive use of indigenous yeasts. Without enzymation, without chaptalization, without acidification. Delicate pressing. 21 months of aging in casks and concrete vats and a rest of 2 months in bottles. There is no fining or filtration.
Viticultural notes
Vines: Aged 30 to 95 years. The cuvée Muntada comes from old vines, the Grenache noir is around fifty years old and the Carignan over 120 years old. The Syrah and Mourvèdre vines are between 15 and 20 years old. These vines are planted on a limestone marl soil and produce an average yield of 20 hl/ha.
Tasting notes
Classic for the region, we find notes of blackberries, rose petals, ground pepper and garrigue. With a great concentration, the wine is in the mouth of a legendary velvety, a crunchy fruit, a great digestibility and an extraordinary length.
