Winemaking notes
Manual harvest in crates with sorting in the vineyard and in the cellar. Traditional winemaking. 100% destemming then maceration in whole bunches in concrete and stainless steel vats. The yeasts used are 100% indigenous, so the wine is produced without enzyming, without chaptalisation, without acidification, without fining or filtration. Aged for 18 months in old casks, concrete vats and 5 months in bottle before marketing.

Soils: Limestone and shale Vines: Aged 30 to 95 years old
Tasting notes
Fresh and subtle, with beautifully concentrated aromas of blackberries, blackcurrants, brandied cherries, liquorice, juniper, peppers, wild herbs and spices. Medium-bodied, a nice acidity well integrated into the material makes it an energetic then tense wine. A classic that will evolve beautifully over more than a decade.
Pairing notes
Wild mushroom risotto, braised ham or good red meat.
