Winemaking notes
Grapes are harvested by hand, then destemmed before undergoing alcoholic fermentation and an 11-day maceration in tanks. After malolactic fermentation, the wine is aged for 10 months in vats, preserving the purity of fruit and the delicate character of the terroir.
Viticultural notes
Located south of Bourges, the Châteaumeillant vineyard spans 91 hectares on sandy and siliceous soils with clay. This historic region, once a Roman trading hub, is known for producing fine, structured reds. The terroir, shaped by granite and schist, brings depth and freshness to the wines.
Tasting notes
This wine charms with its aromas of cherry and Morello cherry. The palate is round and silky, with a light tannic grip that adds structure. A refined, expressive red that balances freshness with elegance, offering immediate pleasure while retaining good aging potential.
Pairing notes
Serve slightly chilled, around 14 to 15?°C. This wine pairs beautifully with braised or pan-seared red or white meats, as well as soft, mature cheeses. Try it with a roast glazed in meat jus or a creamy Saint-Marcellin for a rich and satisfying match.
