Winemaking notes
Vinification begins with fermentation in tanks (12 days of maceration) at 26 to 32°C during which time the cap is punched and the must pumped over twice daily in order to extract a maximum of colour and tannins from the skin grape. Once the malolactic fermentation is achieved, the wine is matured for 6 to 8 months in oak barrels from the Center of France (Tronçais, Bertranges & Limousin forests) (1/3 of which are replaced yearly).
Viticultural notes
Pinot Noir vines grown on a terroir of clays (65%) and limestone (35%). The limestone gives the wine its backbone while the clay gives it flesh. Controlled yields with high-density high crop density and between the
rows.
Tasting notes
Supple, round and beautifully textured, this red Sancerre lets the Pinot Noir express itself with fullness and great charm. It is highly aromatic, with aromas of Morello cherries and strawberries and subtle notes of oak. Its structure and acidity will ensure it ages well, for 5 to 6
years.
