Winemaking notes
The grapes are pressed upon arrival, followed by 24 hours of static settling. Fermentation takes place in temperature-controlled stainless steel tanks, between 16 and 19?°C, to preserve the wine’s aromatic freshness. Aged on fine lees for 5 to 6 months, the wine is then bottled in the spring.
Viticultural notes
The Sauvignon Blanc vines grow on an ancient alluvial terrace of the Cher River, on light soils made of sand and gravel. These fast-warming soils create ideal conditions for crafting precise, expressive wines with finesse and freshness—true to the character of the Quincy appellation.
Tasting notes
The nose opens with delicate aromas of white flowers and citrus. On the palate, it’s fresh, lively, and rounded, with great balance and elegant minerality. The fruit shines through with finesse, supported by a fine structure and a refreshing, lingering finish.
Pairing notes
Best served chilled between 10 and 12?°C, this wine pairs beautifully with river fish, smoked or served in sauce. It also complements goat cheeses such as Valençay. For a refined match, enjoy it with a pike-perch fillet and citrus butter.
