Winemaking notes
After a gentle pressing, the must undergoes static settling for 24 hours. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks between 16 and 18?°C. The wine is then aged on fine fermentation lees for 5 to 6 months, preserving freshness and adding roundness.
Viticultural notes
The Sauvignon Blanc vines grow on south-west facing slopes of clay-limestone soil, nestled between Sancerre and Bourges. This historic terroir, praised since the 15th century, provides ideal conditions for crafting elegant, structured wines with finesse and expression.
Tasting notes
The nose opens with citrus and white flower aromas, with a hint of musk. The palate is round and full-bodied, lifted by peppery and minty notes that bring length and freshness. This Menetou-Salon is lively, fruity, and well-balanced, offering both charm and persistence.
