Winemaking notes
Sancerre d'Antan is vinified in accordance with ancestral methods: gentle pressing, fermentation in aged barrels, followed by a year's ageing on very fine lees. The wine is neither fined nor filtered, and only two rackings are carried out in accordance with the lunar cycle before bottling. The bottles are then "rested" in our cellars for a few months before release.
Viticultural notes
Concentrated, full-bodied and asserting its finesse, this wine is very pleasant in its youth, and deserves to be kept to reveal its full complexity. Don't hesitate to decant.
Tasting notes
This generously aromatic wine expresses a nose evocative of lime, verbena and flint. The well-balanced palate suggests fresh touches of grapefruit, sweet almond and hawthorn, and a light, distinguished woodiness that brings hints of coconut. Its minerality gives it great length on the palate.
Pairing notes
This wine goes wonderfully with shellfish (roasted lobster), fish (turbot with meat jus) and white meats (spit-roasted veal sweetbreads with truffle jus). With cheese, a Vacherin du Mont d'Or and dried pears are a perfect match.
