Winemaking notes
Alcoholic fermentation in stainless steel tanks lasts around thirty days. It starts at 15°C and finishes at 19°C, with regular tastings of the juices throughout the fermentation period, right up to ageing. The first racking takes place 5 to 15 days after the end of alcoholic fermentation.
Viticultural notes
The vineyard was planted in 1986 on the clay-limestone terroirs of “Bannon”, located south of Sancerre near the village of Vinon. The grapes come exclusively from this 1ha 06 plot. The wine is aged on fine lees in temperature-controlled stainless-steel vats, with regular stirring of the lees until Christmas. The wine is then left to rest in vats for 7 months until bottling, without fining or filtration.
Tasting notes
A fine, discreet nose that initially opens with notes of dried fruit, almond and pistachio. This is followed by aromas of orange zest and plum, combined with mineral and iodine notes. A pleasant roundness is enhanced by a fine mineral structure. The finish is fresh and saline, with notes of mirabelle plum and citrus zest. After 3 to 5 years, “Les Côtes aux Valets” will gain in body and complexity.
Pairing notes
This wine generally pairs well with pork, seafood or spicy dishes such as pumpkin crumble, ham carré feuilleté or eggplant tartar.
