Winemaking notes
At the harvest, the grapes are harvested manually and transported to the cellar with the greatest care. Then comes the pressing, an operation carried out very slowly, in order to extract the best juice from the pulp. Cold settling (natural clarification of the must), then alcoholic fermentation in thermo-regulated stainless steel vats (15-18°C) and slow maturation of the wine on its fine fermentation lees. Ageing: 8 months on the lees.

Tasting notes
With aromas of great finesse and slightly exotic (proof of the good maturity of the grapes), its clean, mineral, fruity but not exuberant mouth testifies to an exceptional wine from the most beautiful situations of the appellation. At 10-12°C, this highly concentrated wine will express its strong personality. After 3-5 years in bottles, it will round out, gain in fatness, body and complexity.

This great solitary is seduced by a high-level cuisine. Fish, white meats and cheeses.
