Winemaking notes
Hand-harvested grapes are transported to the cellar with utmost care. A slow, gentle pressing preserves the full aromatic potential. Cold settling (8 °C) and natural clarification of the must precede alcoholic fermentation in temperature-controlled stainless steel tanks (15–18 °C). The wine then rests on its fine lees for 8 to 10 months, building texture and depth.
Viticultural notes
From the legendary Côte des Monts Damnés, farmed since the 10th century. South-facing Kimmeridgian marl soils studded with thousands of fossilised comma-shaped oyster shells (ostrea virgula). Low yields, high vine density, inter-row grassing and organic inputs only. Certified Organic Agriculture.
Tasting notes
Pale gold with bright highlights. The nose is refined and slightly exotic, reflecting excellent grape ripeness. The palate is clean, mineral and fruity without excess. Texture and body develop beautifully with age
Pairing notes
Serve between 12–14 °C. A natural partner for fine cuisine: noble fish, white meats, langoustines and aged cheeses — especially the iconic Crottin de Chavignol, produced in the village where the estate was born.
