Winemaking notes
Fermentation of the grapes in vats (12 days of maceration) between 26 and 32°C. With daily pumping over twice and pigeage in order to extract a maximum of color and tannins contained in the skin of the grape, these operations are essential during alcoholic fermentation. As soon as the malolactic fermentation is complete, the wine is aged for 6 to 8 months in Tronçais oak barrels, which are renewed by thirds each year.
Viticultural notes
Le Sancerre rouge est issu des vignes plantées en Pinot noir sur des sols d’argile et de calcaire. Le calcaire donne sa colonne vertébrale au vin, tandis que l’argile lui donne de la chair. Rendements et vigueur maîtrisés, enherbement dans l’inter-rang, utilisation d’engrais organiques, limitation des intrants, tout est mis en œuvre pour que les raisins de ce cépage très exigent soient les plus parfaits possibles.
Tasting notes
This wine with characteristic connotations of red fruits (cherries, morello cherries, etc.) is subtly woody. On the palate, it is pleasantly round, very charming and reveals a nice astringency (tannins from the grapes but also the aging in oak barrels) ensuring aging for 3-6 years.
