Winemaking notes
Fermentation of the grapes in vats (12 days of maceration) between 26 and 32°C. With daily pumping over twice and pigeage in order to extract a maximum of color and tannins contained in the skin of the grape, these operations are essential during alcoholic fermentation. As soon as the malolactic fermentation is complete, the wine is aged for 6 to 8 months in Tronçais oak barrels, which are renewed by thirds each year.
Viticultural notes
Red Sancerre comes from Pinot Noir vines planted on clay and limestone soils. The limestone gives the wine its backbone, while the clay gives it flesh. Yields and vigor are controlled, grass is planted between the rows, organic fertilizers are used and inputs are limited. Everything is done to ensure that the grapes from this highly demanding variety are as perfect as possible.
Tasting notes
This wine with characteristic connotations of red fruits (cherries, morello cherries, etc.) is subtly woody. On the palate, it is pleasantly round, very charming and reveals a nice astringency (tannins from the grapes but also the aging in oak barrels) ensuring aging for 3-6 years.
Pairing notes
Its aromatic amplitude will enhance your white meats as well as braised or pan-fried red meats. Roasts drizzled with meat glaze are a perfect match.
