Winemaking notes
Authentic is the name of our non-barrel-aged cuvée because it preserves the authenticity of the fruit and terroir, without any additives to distort the fruit's brilliance. The grapes are destemmed and crushed, macerated for around three weeks, vinified in temperature-controlled stainless steel vats, and aged in vats for around 12 months until bottling to truly preserve the natural fruitiness of this cuvée. The wine is then bottled without fining or filtration to preserve its natural character.
Viticultural notes
A.O.C Montagne Saint-Émilion. Deep clay soils at the bottom of the hillsides and clay-limestone soils in the middle of the hillsides. The estate has been committed to organic farming since 2010. No weedkillers or synthetic chemicals are used; herbal teas and liquid manure are used to complement organic treatments, and every other row is plowed several times a year to loosen and aerate the soil.
The soil is enriched with manure.
Tasting notes
Fruity and fresh, with crisp notes of blackberry, blackcurrant, and licorice. An aromatic palate with fine, precise tannins offering a fruity and juicy finish.
Pairing notes
Pairs perfectly with red and pink meats, cheeses, pâtés, and cold cuts.
