Manual harvest.
Total destemming, vatting for 15 to 25 days, aging for 12 months in small casks, separate terroirs and grape varieties, blending then further aging for 12 months in casks. A single bottling, often a small fining, no filtration.
Viticultural notes
The latest addition to the estate, this cuvée bears the name of the locality where old vines of Cinsault and Grenache are planted in the blend.
Tasting notes
A racy power emanates from the harmonious bouquet of red and black fruits enhanced with bewitching spices. A superb smoothness flatters the palate, a ripe fruitiness, a beautiful depth set with silky tannins for a finish that drags on.
Pairing notes
Lamb marinated in spices and black olives or on a skewer.
