Manual harvest.
Aged in small tuns with one-year maturation on fine lees.
Bottling after 14 to 16 months.
Viticultural notes
The vine starts at 200 m. altitude with Carignan on a schist soil and climbs in the white oak woods up to 380 m. on sandstone where the Grenaches in goblets, the majority, a little Cinsault then a few Syrahs in poles flourish. Stone terraces as well as eroded earth exposed to the east, to the east. Same organic philosophy as for all the estate's vines.
Tasting notes
The aromas of the nose are precise, intense and very subtle. On the palate, the quality of the tannin surprises the taster. This very special grain is reminiscent of the tiny particles of sand that break off when rubbing a local stone. The sensation on the palate is enveloping then the finish full. The flavors linger at the end of the mouth, over a length full of strength.

Veal chop with porcini mushrooms, shoulder of lamb confit, confit beef cheek.
