Winemaking notes
A gentle pressing, a long maceration in whole clusters which brings a natural fermentation with indigenous yeasts.
A first aging of twelve months is carried out in small foudres before blending, then follows a second aging of six to twelve months in foudres. An additional rest of six months in bottle allows its structure to settle serenely and to gain in harmony.
Viticultural notes
This confidential cuvée is born on the clay soils, limestone pebbles, sandstone and silica of the eponymous lieu-dit on the Terrasses du Larzac, between Jonquières and the heart of Languedoc.
Tasting notes
Opens with a vibrant bouquet of red and black fruits composed of small black cherries, wild blackberries, and crisp raspberries mingling with accents of sweet licorice and black pepper.
On the palate, the tannins appear silky, of incomparable finesse that accompanies a generous mid-palate with dense and precise fruit. Nuances of sweet spices and garrigue herbs add to the sapidity of the whole.
Pairing notes
To be enjoyed between 16 and 18 °C. It can accompany with elegance a confit lamb shoulder and eggplant stew.
