Winemaking notes
Gavi Palas 2024 is made from hand-picked grapes, gently pressed, and fermented in stainless steel tanks to keep all that freshness. It matures on its lees for at least three months, which gives it a bit more body and complexity.
Viticultural notes
Made exclusively from the Cortese grape variety, grown on the hills of southern Piedmont, in the historic Gavi area, on the border with Liguria. The vines are rooted in white limestone soils mixed with a small proportion of clay, which ensure optimal drainage while retaining just enough moisture to promote balanced ripening of the berries. The vines are trained using the Guyot system, ensuring optimal aeration.
Tasting notes
A straw yellow color with greenish reflections. The aromas on the nose tell of fresh floral notes, alternating with more fruity nuances. In the mouth it is round, intense, refreshing, with an excellent acidity. Each sip brings flavours of pear, green apple, white peach, lemon zest, and a hint of wet stone.
Pairing notes
Very versatile, it is perfect, as well as throughout the meal, for an aperitif, where it is undoubtedly a winning choice. It goes well with fish dishes, even raw ones. To die for with peppers and anchovies.
