Winemaking notes
Vinification involves fermentation in 55 hl oak vats for 20 days with the skins, using a soft "shower" system to wet the cap at temperatures between 30°C and 27°C, followed by malolactic vat fermentation. Refinement takes a minimum of 3 years, with 2 years spent aging in average-sized oak casks before further refinement in the bottle.
Viticultural notes
The soil is composed of Tortonian and Helvetian calcareous marl with a basic pH and over 30% sand. It is poor in organic matter but rich in microelements such as iron and magnesium. The vineyard has a south-southwest exposure, with 4,500 vines per hectare. Yield management involves thinning excess bunches at the end of summer, leaving an average of 5-6 bunches per vine. The vineyard follows a production philosophy certified by V.I.V.A “SustainableWine”. Harvesting is done manually.
Tasting notes
The color is ruby and garnet red with brilliant hues. The nose is complex and full of character, featuring notes of mature fruits, mint, eucalyptus, gentian, and fine spices. The taste is rich and well-structured, with a tight weave of fine tannins, standing out for its elegance and harmony, highlighting this truly unique Barolo cru.
