Winemaking notes
This champagne is made solely from Chardonnay from Avize, a Grand Cru terroir of the Côte des Blancs, renowned for the exceptional quality of its grapes. This cuvée is vinified partially in wood (16%) and the malolactic fermentation was not carried out in order to preserve all the freshness of this wine. The bottles have benefited from a 5-year maturation in the cellars of the house and the wine is dosed Brut, at 8 g/L.
Viticultural notes
The year 2015 represents an extraordinary harvest but also the recognition of Champagne as a UNESCO World Heritage Site. The ripening of the berries, thanks to a cool end of summer, will give rise to juicy, ripe and concentrated grapes.
Tasting notes
This champagne has a golden and shiny color with slight green reflections and its effervescence is soft, creamy and ultra fine.
The nose reveals a precise and mineral bouquet, with notes of ripe citrus, almost vanilla white flowers and harvest (almond, wheat). The freshness is also expressed in the form of mint and iodine like a sea breeze, gradually complemented by warmer nuances of smoke, hot butter and toast.
On the palate, the attack is creamy, both tender and concentrated. The wine unfolds intensely, supported by the delicate effervescence. The sensation is that of a ripe, full and concentrated juice carried by this incredible powdery texture with a resolutely saline finish. A few woody and smoky notes further stretch the wine, giving it that extra length and complexity that predicts a long aging potential. The finish is pure, refreshing and salivating.
