Winemaking notes
Known in the winery as “infusion,” this process brings out the juicy, ripe character of the Pinot Noir grapes while preserving their freshness.
A small amount of Chardonnay juice is added to the Pinot Noir maceration to ferment together and blend perfectly.
Viticultural notes
From a fresh vintage, this 2013 Rosé reveals all the juicy richness of Pinot Noir grapes grown in early-ripening, south-facing clay-limestone soils, refined and elongated by the freshness of Chardonnay grapes grown in north-facing vineyards in Chouilly. Absolutely charming!
Tasting notes
Fine, regular, and calm effervescence. Perfectly distributed across the entire width of the glass. Complex bouquet dominated by an almost minty freshness and tart fruits, wild strawberries, and raspberries. Then come the spicy and smoky accents typical of Pinot Noir: dried fruits, toasted almonds, and cocoa beans. There are also salty notes, reminiscent of sea spray. The finish is fresh, long, and infinite.
Pairing notes
Rather fresh, fruity, and generously flavored, it is appealing and pairs perfectly with a variety of dishes. While other pairings are possible, southern Mediterranean cuisine is a perfect match for the flavor profile of Rosé Champagnes.
