Winemaking notes
17% of the wines are vinified in wood (oak barrels) with weekly stirring. 30% malolactic fermentation. To make rosé champagnes, the bleeding method is used after cold skin maceration. The Brut Rosé cuvée benefits from an average of 4 years of maturation in the cellars and also a rest of 6 months after disgorging in order to perfect its maturity. The dosage is adapted to each vintage between 8 and 10 g/l.
Viticultural notes
Louis Roederer decides to invest in one of the earliest vintages of Champagne (Cumières), where the shallow, steeply sloping clay-limestone soils, benefiting from a southern exposure with light enhanced by the river de la Marne, allow to reach a very high phenolic maturity. In these selected terroirs, Louis Roederer applies precision viticulture adapted to the production of a saignée rosé.
Tasting notes
The fruity aromas of wild red berries are followed by floral notes, scents of zest, sweet and spicy, while the nuances of dried fruits and then cocoa evoke aging in oak wood. Rich, fleshy, the Brut Rosé exalts the maturity of the fruit. With its shimmering effervescence and its first impression of freshness, it opens with smoothness on almost exotic notes, mixed with the pure minerality of Chardonnays.
Pairing notes
Great with salmon, lamb and even pheasant. Also goes very well with creamy cheeses. For dessert, serve it with a sabayon.
