Winemaking notes
The grapes are grown exclusively in the Côteaux de Cumières in Louis Roederer's bio-dynamic estate . Brut Nature is made in the Traditional Method, aged for 5 years in cellar and left for a minimum of 6 months after disgorging to attain the perfect maturity. No dosage. Two thirds of the cuvee is Pinot Noir and Pinot Meunier and the remaining one-third is Chardonnay. 25 % is vinified in oak casks with no malolactic fermentation.
Viticultural notes
From the bio-dynamic estate in Côteaux de Cumières. There are distinct variations in climate. The majority of its vineyards are situated in a temperate maritime climate with slight continental influences, particularly in the south-east.
Tasting notes
Yellow in colour with glints of light amber. The nose has an intense bouquet combining sweet flowers yellow fruits and lightly roasted dried nuts . It evolves towards spicy and citrus notes with a hint of pepper.
Pairing notes
Fantastic with fatty smoked fish (tuna, salmon) as well as cured hams and also with hard cheeses.
