Winemaking notes
Grapes destemmed then put in stainless steel tanks. Fermentation begins with natural yeast. Pumping is carried out 2-3 times a day. The maceration lasts 15 to 20 days to extract as much color and tannin as possible. Aging in wine vats for 8 to 10 months before bottling.
Viticultural notes
The Châteauneuf du Pape estate now reaches 60 acres. The vineyards are located in the region of "La Crau" which is distinguished by landscapes strewn with pebbles. Terroir designated by the AOC.
Tasting notes
Intense color with violet hues. Complex aromas of stewed red fruits with spicy and balsamic notes. Its mouth is expressive, round and generous with silky tannins. The attack is very supple with a long spicy finish.
Pairing notes
Open at least one hour before serving between 17 and 18°C. Excellent now, this cuvée will gain in complexity and elegance over the years. Ideal with game such as braised wild boar, coq au vin or hare stew. It will enhance grilled red meats and aged cheeses.
