Winemaking notes
Fermentation takes place in stainless-steel tanks with 10–12 days of skin contact and gentle pump-overs to extract aromas and delicate tannins. Malolactic fermentation also occurs in stainless steel. The wine is then aged for at least 18 months, including 12 months in large oak casks, followed by bottle refinement before release.
Viticultural notes
The vineyard soil is characterized by Sant’Agata limestone marl with layers of Asti sand, originating from marine sedimentation dating back approximately 8 to 9 million years. The vines are trained using both the Guyot and low-cordon systems. The vineyard is certified by Equalitas, and harvesting is carried out by hand, reflecting a strong commitment to quality and environmental responsibility.
Tasting notes
Deep ruby red color with violet highlights. The nose is broad, complex and elegant, expressing cherry, sour cherry, and dark berry aromas, enriched with floral violet notes and a hint of spice. On the palate, it reveals generosity, depth, and perfect balance, with velvety, refined tannins. The interplay between freshness and structure, delivering a vibrant, harmonious and persistent finish.
Pairing notes
Serve at 18 °C after a brief aeration. Pairs beautifully with pasta alla Norma, fish soup, pepper-crusted beef fillet, or roast lamb.
