Winemaking notes
Fermentation takes place in stainless steel tanks, with a skin maceration lasting 13–14 days. Extraction is conducted gently using a soft “shower” system to wet the cap, with temperatures maintained between 27°C and 32°C. Malolactic fermentation occurs in tank.
Viticultural notes
The vineyards are planted on calcareous clay marl soils with a significant presence of lime and sand, a classic geological profile of Barbaresco that contributes to aromatic finesse and structured tannins. The parcels benefit from east and south-east exposures, ensuring gradual and balanced ripening of Nebbiolo. Vines are trained using the Guyot system, and harvesting is carried out entirely by hand, allowing for careful grape selection.
Tasting notes
The wine displays a garnet red colour, typical of Nebbiolo. The bouquet is complex, delicate and ethereal, with pronounced notes of small red berries, green peppercorn and fine spices. On the palate, it is complex and aristocratic, showing excellent harmony and a refined texture of silky tannins.
Pairing notes
Recommended serving temperature: 18°C. Food pairings: Ideal with roasted meats, game dishes and hard cheeses.
