Winemaking notes
The name "Calalenta" roughly translates to a "slow drop," reflecting a philosophy of patience and the specific timing of the harvest. Grapes are hand-picked entirely during the night. This retains the grapes' natural acidity and prevents premature oxidation before they reach the crush pad. Following fermentation, the wine undergoes a quick but crucial 30-day aging on the lees in stainless steel to build texture and round out the mouthfeel.
Viticultural notes
100% Merlot. The vineyards sit at the foot of the Maiella mountain massif, which rises to nearly 3,000 meters. This specific positioning creates a diurnal temperature shift that drives the wine's aromatic structure, preserving a superb balance between fruit development and natural acidity.
Tasting notes
A luminous, very pale pink blush color. Fresh and flinty. Prominent, clean aromas of wild strawberry, fresh-cut watermelon, and delicate rose petals. The palate is defined by a crisp minerality that speaks directly to the Abruzzo terroir. It features a refreshing, vibrant acidity that remains in complete harmony with the fruit, creating a well-rounded and silky mouthfeel.
Pairing notes
Calalenta is considered excellent when served on its own before a meal. It also pairs very well with general fish courses, and is specifically recommended for raw fish preparations.
